winter cozy breakfast: puffed pancakes

Puffed pancakes can be so very simple.  There are more elaborate ways to prepare them but here is the easy way:  Preheat oven to 400.  Whisk together 2 eggs, 1/2 cup of flour, 1/2 cup of milk, 2 tbsp of sugar, a dash of cinnamon and salt and a drop of vanilla.  Melt a tbsp of butter in a round cake pan in the oven for a minute, and then pour the batter into the pan.  The pancake will be puffed and ready in 10-12 minutes.

Cookies from the Levain Bakery in NYC are our favorite.  They are flaky and crispy on the outside and a bit doughy in the middle.  They're not too sweet or buttery and the ingredients are balanced in ideal proportions.  I decided to try to replicate these cookies at home.

I tried this recipe from City Cookin.  The five year old loved having his own prep space to measure, help and make a mess.

And here is the result.  The cookies didn't have that variety of textures that the Levain cookies do but it was still a wonderful cookie -- probably the best chocolate chip cookie recipe I've used so far.  To be continued though...

roasted stalk of brussels sprouts

How to roast a stalk of Brussels sprouts: Preheat oven to 425.  Rest stalk on a big dish and drizzle with sea salt and olive oil.  Flip stalk over after 15 minutes or so.  Keep an eye on it and the stalk should be roasted in under half an hour.

I pick the stew recipe based on what we have lying around in the fridge and pantry.  This evening's stew was chorizo (I substituted mild Italian sausage) and white bean, with spinach.  Here's the pretty quick and easy recipe.

We used this recipe but substituted a high quality Swiss for the Emmentaler.  We used 1/2 Gruyere, 1/4 Swiss and 1/4 sharp white cheddar.

It came out pretty well.  The kids and I loved the apple, cheese and baguette combo.
