I sometimes grind my almonds but the Trader Joe's bagged almond meal is one of my favorite shortcuts.
beet pizza with arugula and hazelnuts
Cook and peel 5-6 beets. Add garlic, olive oil and balsamic (1:2 ratio) to taste. I used 3-4 cloves of garlic, 1 tbsp evoo and 2 tbsp balsamic. Puree your sauce! (I love my immersion blender for tasks like this.) Spread on crust or flatbread and top with cheese. I used goat on one side and feta on the other. Bake at 400 until cheese melts, 10-15 minutes. Top with arugula and chopped, toasted hazelnuts.
